About the Winery
CA’VIOLA story begins in Montelupo Albese thanks to Beppe Caviola.
Leveraging his skills acquired during the studies at the Enological School of Alba, he begins with vinifying grapes in the garage of his parents' house, leasing the vineyard of his dreams, named “Barturot”. Driven by curiosity and intuition, Beppe firmly believes that innovation should always serve tradition. Beppe's grand debut happens when he bottles what will become his first label, the "Dolcetto Barturot". Another courageous venture joins in immediately: in Montelupo, Beppe manages a small plot of Barbera that he decides to vinify with new directions, giving birth to the famous Bric du Luv, embodying the evolution which is taking shape.
In 1996, with the birth of new labels, Dolcetto Vilot and Barbera Brichet, Beppe dedicates himself entirely to viticulture, simultaneously leveraging his tasting skills honed over the years. Various consultations for friends and fellow producers in the area soon transform into a fully developed consulting business. His career as an oenologist begins, and in 2002 he is honored with the title of “Winemaker of the Year” by Gambero Rosso and Slow Food, accolades that pave the way for regional and extra-regional consulting collaborations. In the same year, the winery moves to Dogliani, where the Caviola family establishes the Villa Bracco Relais – a complex where production, consultancy, and hospitality coexist in harmony, united by the philosophy of simplicity and excellence.
In 2005, the most prestigious chapter unfolds: cultivating a vineyard of Nebbiolo for Barolo. The chosen one is the Sottocastello Cru in Novello, marking the debut of the first label of the “King of Wines.” In the following years, Ca’vioLa continues its growth, thanks to the introduction of Beppe's niece Michela Vivalda. Integrating her energy with Beppe, she breathes new life into the company. International grape varieties like Chardonnay and Riesling are also introduced, giving rise to fresh and innovative wines, emphasizing the constant desire to experiment and continue crafting excellence.

SIRENA LANGHE ARNEIS DOC '22/'23- €15,95
Description: Ca’Viola’s “SIRENA” (from the sinuous hills of Langhe DOC denomination) is medium-structured, round and persistent white wine made of 100% Arneis grapes. Harvested in the first half of September, fermentation process takes place in steel tanks at a controlled temperature for about 10-12 days with indigenous yeasts. Ageing and refinement follows through always in steel for a period of 4 to 5 months. It presents a straw yellow color with bright green reflections. The bouquet offers an intense nose of wild flowers (chamomile) and hints of white fruit, as well as apple and pear notes. The palate delivers persistent while soft and broad, embracing consistently the fruity and flowery notes experienced in the nose, ending with a very pleasurable finish. Food match: great with both land & sea-starters, mainly to combine with seafood & vegetables courses, yet white meat lightly seared served with grilled green asparagus would also match beautifully. RITA LANGHE ROSATO DOC '22/23 - €20
Description: Ca’Viola’s “RITA” (from the sinuous hills of Langhe DOC denomination) is a delicate, crisp, refined rosé made of 100% Nebbiolo grapes, the first rosé from Beppe Caviola from his desire to experiment and innovate. Inspired by Provence and dedicated to Beppe’s mom Margherita. Harvested in late September/first week of October, the vinification process starts with gentle pressing, with a percentage of whole grapes in pre-fermentation, static decantation at 4-5°C in contact with the lees for 4-7 days. Fermentation for about 15 days at 16-17°C, partly in steel, used tonneaux and in ceramic Amphorae. Ageing and refinement for a period of 4 to 5 months “sur lie”, also in this phase partly in steel, partlyin tonneaux and in ceramic amphora. Appearance shows a delicate pale cherry pink. The scent is refined with subtle fruity notes of peach, raspberry and floral hints of rose. It is balanced, pleasant, crunchy and lively in the mouth, with a pleasant savory finish. Food match: perfect with aperitif, suited for light shell-fish and seafood starters, summery dishes with veggies and light pasta dishes. To try as well with various fresh cheeses. Recommended serving-temperature of 10/12°C.

CLEM LANGHE RIESLING DOC 2022 - €27,50
Description: Ca’Viola’s “CLEM” (2,5Ha, 600m a.s.l vineyards in the Cissone & Bossolasco municipalities) is a fresh, juicy and extraordinarily savoury white wine made from 100% Riesling, from limestone and clay marls soils. The first white in the history of Ca’ Viola, a new project in Alta Langa. Harvested in late September/first 10 days of October, the vinification process starts with gentle pressing, Soft, static decating with controlled temperature. Fermentation for about 15/20 in temperature-controlled tanks. Ageing and refinement for a period of 10 months “sur lie”. Shining yellow color appearance, brings immediately its freshness and distinguished nose forward, with white flowers, white peach and citruses, cedar and grapefruit guiding the scent. On the palate a striking and beautiful acidity - the main characteristic of the Riesling variety in its best expressions – enveloping the sip and filling with sensations. Juicy and very fresh finish, with an extraordinary flavor and a long, inviting-for-more finish. Dreams guaranteed! BARTUROT DOLCETTO D’ALBA DOC
Description: Ca’Viola’s “BARTUROT” (1,9Ha, 400m a.s.l ‘Barturot’ single-vineyard in Montelupo Albese) is a fruity, complex and floral red wine made from 100% Dolcetto, from sandy-silty and calcareous soils. The first wine ever produced by Beppe Caviola in 1991, convinced of the extraordinary plot of land in Montelupo. With this label Beppe’s dream became reality, and to date Barturot Dolcetto remains the winery’s historic label. Harvested through second/third decade of September, the vinification process starts with maceration and fermentation for about 15 days in heat-controlled tanks. Ageing and refinement for a period of 8-10 months in large casks. Appearance with a ruby color and purple hues. The nose expresses a complex fruit scent and a floral bouquet with notes of violet, currant and cherry on the finish. A characterful wine which maintains its drinkability. A long, harmonious, and fruity finish calls for another glass of this wonderful expression of Dolcetto. Food match: Cold-cuts, beef bresaola, pasta and risotto courses. Makes a great combination with lam and venison too. Recommended serving-temperature of 14/16°C.

Description: Ca’Viola’s “VILOT” (3Ha, 400m a.s.l ‘vineyards in Montelupo Albese) is a fresh, fruity, floral and highly pleasurable red wine made from 100% Dolcetto, from sandy-silty and calcareous soils. The ‘little brother’ of the more complex Barturot. For Ca’Viola’s philosophy it embraces the archetype of everyday wine, quick and ready to drink. Harvested first decades of September, the vinification process starts with maceration and fermentation for about 10 days in heat-controlled tanks. Ageing and refinement for a period of 10 months in steel. The appearance shows a deep ruby red color. The nose plays on fresh fruity notes and reveals pleasant notes of amarena-cherry and blackberry on the finish. The palate is agile, very smooth and balanced. A fresh, dynamic and highly gratifying sip, making this Dolcetto suitable for all palates. Description: Ca’Viola’s “BRIC DU LUV” (1,5Ha, 400m a.s.l. ‘Bric du Luv’ single-vineyard in Montelupo Albese) is a fruity, elegant, powerful and balsamic red wine made from 100% Barbera, from sandy-silty and calcareous soils. Together with “Barturot”, it is the other historic label in Ca’Viola’s range, produced also for the first time in 1991. Harvested third decade in September/first decade October, the vinification process starts with maceration and fermentation for about 20-25 days in heat-controlled tanks. Ageing and refinement for a period of 13-15 months in small 10 HI casks. The color is ruby red with violet hues, intense and gloomy. The nose combines the classic fruity notes of the vine, with singular and captivating balsamic and mental notes. The palate is broad, soft, highly pleasurable, powerful and elegant at the same time. A very long and consistent finish accompany precise retrolfactory references. It holds up time perfectly, as you can appreciate it in 8-10 year old versions. Food match: perfect in combination with red meats, pasta with meaty-sauce, or a creamy mushroom risotto. A medium-aged cheese platter to complete your meal. Description: Ca’Viola’s “BRICHET” (2,4Ha, 400m a.s.l. vineyards in Montelupo Albese) is a fruity, agile, and slightly spiced red wine made from 100% Barbera, from sandy-silty and calcareous soils. Brichet relates to Bric du Luv, as a “younger sister”, being the most ready to drink, everyday-wine of the Barbera line. Harvested third decade 15/18 days in heat-controlled tanks. Ageing and refinement for a period of 12 months in large casks. Appearance shows a deep ruby red with purple reflections. The nose is a feast of red fruit, and notes of undergrowth and sweet spices. A palate developing with freshness and juicyness makes this red a very enjoyable, inviting and agile in its food-companionship. Food match: wonderful in combination with pasta’s course, veal and pork preparations, game and fowl. Its savory and juicy nature makes it also highly gratifying with light-to-medium cheeses. Description: Ca’Viola’s “RANGONE” (450m a.s.l. various vineyards in Montelupo Albese) is a crisp, broad, elegant and complex red wine made from 100% Nebbiolo , from Gray silty marls alternating with yellow-reddish sands and sandstones (Lequio Formation). The name Rangone has ancient roots and comes from the Counts Rangone of Montelupo Albese. Harvested on the first decade October, the vinification process starts with fermentation for 15 days (temperature-controlled tanks with 10/20% whole grapes), followed by maceration for 10-15 days. Ageing and refinement for a period of 8-10 months in large barrels. The appearance is ruby red with garnet hues. The nose is very crisp, with remarkable breadth and complexity, with notes of dark fruit, underbrush and wet earth in evidence. The mouth is more elegant and powerful, with a “Burgundian” atmosphere, snappy yet austere, with well-developed silky tannins. A long and satisfying finish, with nice recall of the fruit. Food match: this austere Nebbiolo will accompany with elegance your game and stews courses. Matured and old cheeses will also wonderfully match this small king. Description: Ca’Viola’s “CAVIOT” (various altitude/exposure vineyards in Barolo DOCG district) is an intense, small-red fruity and harmonious red wine made from 100% Nebbiolo. Barolo in its most classic expression, where the blend of grapes coming from vineyards with different soil, exposures and altitudes, contributes to the varietal balance and pleasurable sip. The term Caviòt is the nickname with which the inhabitants of Montelupo Albese affectionately addressed Clemente, Beppe Caviola's father. Harvested on the first half of October, the vinification process starts with fermentation for 15 days (temperature-controlled tanks), followed by submerged-cap maceration for 10-15 days. Ageing and refinement for a period of 24 months in large casks. The colour is ruby red with light garnet reflections, introducing an intense aroma of violet, rose and small red fruits, and a slightly balsamic finish. In the mouth the texture is thick and silky, the harmonious structure envelops the palate with soft and persuasive tannins, making itself remembered for a long time in its finish. Description: Ca’Viola’s “SOTTOCASTELLO di NOVELLO” (1,9Ha 450m a.s.l. ‘Cru Sottocastello di Novello’ vineyards) is an intense, small-red fruity and harmonious red wine made from 100% Nebbiolo, from clayey-sandy, moderately calcareous soils. A maximum expression of Barolo’s King of Reds, firstly produced in the 2006 vintage. The relatively young age of the vines and the progressive discovery of a cru with great potential - albeit not celebrated like others in the area - allows Ca’Viola’s team to glimpse exciting future developments for this Cru. Harvested on the first half of October, the vinification process starts with fermentation for 15-20 days in thermo-controlled non-vitrified concrete tanks (with a percentage of whole grapes). Maceration follows for 15-30 days with submerged cap. Ageing for a period of 24 months in large barrels + 12 months in non-vitrified concrete tanks. This Barolo presents itself to the eye with a rather deep ruby red colour with orange reflections. The nose expresses balsamic and spicy characters, with clear references to the undergrowth, mentholated and ethereal hints, and notes of chocolate and tobacco. The palate is very elegant and silky, supported by a rich structure and a dense substance that persists in the long harmonious finish. Food match: This elegant red will delight you combined egg-pasta (e.g. black-truffle & taleggio tagliarini). A wild-boar stew or ‘Tagliata di Manzo” will also accompany this King to the table. Description: Ca’Viola’s “SOTTOCASTELLO di NOVELLO RISERVA” (1,9Ha 450m a.s.l. ‘Cru Sottocastello di Novello’ vineyards) is a floral, powerful, dense yet subtle, fresh and persistent red wine made from 100% Nebbiolo, from clayey-silty gray-whitish marl (Marl of S. Agata Fossili laminate) with layers of sand and sandstone (Arenarie di Diano d’Alba). Another dream, the first “Reserve” of Beppe Caviola and his team. Highest quality grapes. This wine rests for a total of 7 years, first in large oak and then ceramic amphorae barrels, then in the bottle. An apotheosis of the King’s of Reds expression. Harvested on the first half of October, the vinification process starts with fermentation for 15-20 days in thermo-controlled non-vitrified concrete vats. Maceration follows for 25-30 days with submerged cap. Ageing approx. for a period of 36 months in large barrels, 12 months in cermaic amphorae, and approx. 24 months in the bottle. The appearance of this Barolo Riserva is dark, intense and with a clear garnet. The nose delivers hints of cherry, raspberry, floral and citrusy notes, violet, dog rose and liquorice. With a powerful, dense and structured taste, it leaves room for a subtle tannin; the palate is tonic and handsome, very savoury, fresh and persistent in its finish, inviting for a meditative enjoyment. Food match: Wild boar stews are also here a match made in heaven. Delicious with rich truffles dishes, such as “Tajarin all’uovo” with white truffles, or creamy tagliatelle with black truffles.
